Technically, I guess she's not a hurricane. But she was supposed to become one. I'm sitting at home baking cookies, because all the clients cancelled and half the audiologists didn't come in due to Fay. But now I feel like I'm in the Twilight Zone. I wake up expecting hurricane force winds and dark clouds-- it's not even raining. You can feel electricity in the air, though. That feeling that something big is about to happen. The schools are closed, it's kind of a weird yellow overcast sky, and the streets are generally calm. It's strange to say the least. It's one of those unexpected days where you can catch up on things you put off for so long. My roommate washed the dogs. We are having the repairman come and fix the sink. And I am making crazy flaxseed cookies. Here's the recipe (trainer approved):
Cookies
Makes 48
1 cup whole wheat flour 1 cup packed brown sugar or stevia
1 cup rolled oats 6 egg whites
3/4 cup flaxmeal 1/2 cup natural apple sauce
1/4 cup whole flaxseeds 1Tbs canola oil
1tsp baking soda 1Tbs vanilla
1tsp salt 1 cup organic chocolate chips
1 cup soy protein powder 3/4 cup chopped walnuts
Preheat oven to 350 deg. Combine dry ingredients except chocolate chips and nuts, mix well. Add egg whites, applesauce, oil and vanilla. Beat w/electric mixer until combined. Stir in chocolate chips and nuts. Drop 1Tbs of dough onto oiled cookie sheet for each cookie, flatten slightly. Bake 12-14 minutes, remove from cookie sheet and cool.
