Opening up to strangers

Enter the world of your professional career. Start telling people what you do. They start telling you their life story. Now you're either going to be one of two people. You could be the person who is very interested in other people's stories. You might sit there and listen and take it all in, all the while sharing the emotions of empathy for the other person's plight. Or you could be the person who smiles and nods and thinks, "Why is she telling me this? I just wanted more ketchup packets."
Why do strangers suddenly open up when they find out about your profession? Does this only happen to certain professions? I don't know what side of the coin I am on, yet. But I suppose I will find out soon enough.
